It’s been a while since you’ve heard from me and it’s because life is just plain busy! So, something that’s been making it a bit easier is making way more meals with simple ingredients… many of which are able to be eaten without utensils in one hand, like these pancake tacos.
As a new Mom, I understand the “I don’t have time” excuse more than ever. Still, if I don’t make time, I’ll be left deprived of energy both physically and mentally, so I prioritize having nourishing staple meal ingredients ready to go, just like I always have. Then those ingredients can be transformed into a satisfying meal at anytime. Everyone needs fast, easy, delicious meals, so this is just the first of new power bowls I’ll be regularly posting.
While April 23 is National Picnic Day, you don’t need a reason to whip up these snack bites any time you have a ripe banana on hand. Unlike my other energy bite recipes, you don’t need a food processor, just a good old mixing bowl and rubber spatula or wooden spoon. They’re perfect for kids and adults, before a workout or as an afternoon work snack, and as a side with or to finish off a picnic meal!

Today the blog is taking a bit of a turn away from fitness nutrition and seasonal recipes to highlight an important topic that impacts many couples around the world, but doesn’t get enough press. Even if I were not pregnant or trying to become pregnant, I’m excited to share a passion project and recipe from two registered dietitians and friends, Liz Shaw and Sara Haas(Sara is also a chef!).
With Thanksgiving coming up next week, it’s definitely time to start sharing recipes for the holidays! I’ve been whipping these up and impressing family members on Thanksgiving for at least five years, so it is about time you get to enjoy them, too. Since these aren’t the prettiest of all my recipes, I showed a picture and polled my Instagram followers to see if they were still worth posting on the blog. I had an overwhelming 96% say YES, so lucky you, you get to eat these delicious things, too.
Nothing makes me crave warm and spicy food like the chill of fall. This past week has finally brought that weather, so I’m reaching for soups and stews regularly. While my Three Bean Chili is an easy go-to recipe for this weather, especially since I can make it in a big batch and freeze for later, sometimes I want that same flavor and heartiness with a creamy texture.
Most of my recipe roundups are created as a result of a client need. It is amazing how many people I meet with who say they just hate bottled dressings! While salads can be topped with flavored vinegar, hummus, or even chili or taco filling (those are my favorites), sometimes a good dressing hits the spot. For all of you who are like my clients, or just want something different, give these dressing recipes a try. They’re all created by registered dietitians!

Sheet pan recipes are taking over the blog world and for good reason! They not only make weeknight dinners much easier in terms of the cooking process, but also in terms of clean-up. All you need to clean is the cutting board, knife, a bowl and the baking sheet. No pots or pans or multiple cookware items.
While it may still be August and in my mind summer just began, all over the country kids are already heading back to school!
