Dark Chocolate Candy Cane Popcorn

When I first started dating Tim back in college, he was so excited to take me to Peterbrook Chocolatier when I took my first trip to his hometown of Jacksonville, FL. Most of their stuff is amazing, but their chocolate covered popcorn became a fave of my family real quick, too. {Click if you missed day 1 and 2 of chocolate peppermint week to see the baked oatmeal and brownie Christmas trees}

This past weekend I was staring at the multi-color corn we had bought as a Thanksgiving decoration, deciding whether I should throw it in our compost or try to pop it. So, my friend google pulled up this blog post with a method that I figured I might as well try. It didn’t involve plucking each kernel out of the ear of corn (I have no time for things like that), but instead sticking the entire ear of corn into a paper bag and tossing it in the microwave on the popcorn setting.

While it had me hysterical laughing by the end cause the bag maybe exploded open, it quickly resulted in a good 10 cups of popcorn! Now, while I like to snack on it sometimes, Tim has a popcorn aversion cause he hates it getting stuck in his teeth. So, I knew covering it in chocolate would be the only way he’d help me eat it. And, since I was in a peppermint mood, this “recipe” was born!

Notes:

  • While I used Whole Foods 365 brand dark chocolate chips, any chocolate should do!
  • While I enjoyed adding peppermint, not everyone is a peppermint fan, so feel free to add other toppings like coconut or nuts (or leave it plain!)
  • If you ever wind up with day old stale popcorn, this makes it still worth eating!
  • I like the Wholesome brand for candy canes since they’re naturally flavored and colored. You can click the link to prime them, but they’re under $5 at Sprouts and most Whole Foods.

Dark Chocolate Candy Cane Popcorn

Ingredients

  • 4 cups popped popcorn
  • 2/3 Cup dark chocolate chips
  • 1 tsp butter, vegan butter, or coconut oil
  • 1 crushed candy cane (naturally colored and flavored)

Directions

  • Add chocolate chips and butter or coconut oil to a microwave safe bowl.
  • Cook in the microwave on high for 30 seconds, then stir. Repeat until chocolate is melted. It usually takes me 3 times.
  • Dump popcorn over a silpat, other silicone baking mat, or wax paper that are laid over an aluminum baking sheet.
  • Sprinkle desired amount of crushed candy cane over top and let cool at room temperature for an hour or in the refrigerator for 10 minutes.
  • Enjoy or wrap and gift to your favorite coworker or hostess!
