Vegan Ginger Peach Donuts

I feel as if my job has taken a quick turn to being less of a dietitian and more of a healthy food trend expert! Since the Fancy Food Show at the end of June, I’ve written a few articles and chatted about food trends on 6 ABC Philadelphia, and created these trendy treats for you, too!

When looking at the top food trends from 2016, vegan donuts and ground ginger were super hot. Why not mix them together with some delicious peaches for a mini dessert? {mini desserts are also all the rage right now}

While we’re in the heat of fresh fruit and vegetable season, sometimes life is too busy to always have fresh items on hand. While canned beans and frozen vegetables are always a staple in my house, I was pleasantly surprised with the simple ingredients, and quality taste and texture of the Libby’s peaches in this recipe! The peach slices were hearty enough, but still melt in your mouth and they are packed on in fruit juice. Win! I can see these being especially helpful in the life of a busy parent or busy athlete to get enough quality nutrients in.

I was just chatting with some of my RD friends the other day in a dilemma about this blog. Looking back on my first blog posts, they were delicious and I love them, but they were complicated and took a long time to make. My life is busy enough now that I rarely have time to make my sweet potato black bean burgers anymore even though I love them so! As my life has changed, I’ve made it more of a priority to share with my audience that healthy can be easy, affordable, and make with items you already have in your pantry so you can save the extra trip to the grocery store!

Vegan Ginger Peach Mini Donuts

Serves 42-48

Ingredients:

Donuts

  • 1/2 Cup non-dairy milk of choice
  • 1 tablespoon white or apple cider vinegar
  • 1 tablespoon avocado, olive, or other vegetable oil
  • Heaping 1/2 Cup Libby’s peaches
  • Remainder of can of Libby’s peaches
  • 1/2 Cup pure maple syrup
  • 1 teaspoon vanilla
  • 2 Cups whole wheat flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon high quality ground ginger

Glaze

  • Leftover liquid from can of peaches
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Directions:

  • Heat oven to 350 degrees F
  • Drain liquid from the can of peaches and reserve for the glaze.
  • Add a heaping half cup of the peaches to a food processor and blend until smooth
  • Dice the remaining peaches and set aside
  • In a medium bowl, whisk the milk, oil, and apple cider vinegar until slightly frothy
  • Stir in the pureed peaches, 1/2 cup of maple syrup and vanilla extract
  • In a separate bowl, whisk flour, baking powder, salt and ground ginger
  • Add the wet to the dry, stirring just until incorporated
  • Finally add the diced peaches, stirring in gently
  • Spray a mini donut pan and/or mini cupcake pan (for donut holes)
  • Add 1 tablespoon of mixture to each slot (or fill no higher than 3/4 full)
  • Bake for 6-7 minutes, or until firm to the touch
  • While donuts are baking, heat a pan over medium and add the liquid from the can of peaches as well as the vanilla and maple syrup. Stir until it is reduced to a glaze, between 6-10 minutes. Sprinkle ground ginger in and stir well
  • After letting donuts sit about 5 minutes, remove from tin and let cool
  • Drizzle glaze evenly over donuts and enjoy!

  1. This recipe sounds wonderful! Can’t wait to try these! A question though- I have fresh peaches I want to use- what could I use for the glaze, in place of the “leftover liquid from can of peaches”? First thing that comes to my mind is maybe applesauce, but not sure that would meld well with the flavor profile. What are your thoughts? Tia!

    • A juice might work better than the applesauce texture wise. If you don’t mind a chunky texture, you can also reduce some frozen chopped berries in a pan with vanilla extract and water or your choice of milk too. You could also let a little added sugar in and mix some powdered sugar with milk 😀
